Castaways Bistro Enters a New Chapter in Punta Cana

A restaurant can build a reputation by serving great food, but staying relevant in a destination as dynamic as Punta Cana requires something more. It requires the willingness to evolve without losing the personality that made guests return in the first place.

That balance has become part of the story at Castaways Bistro Restaurant in Los Corales. What began as a casual idea between Sylvia and Michael Livingston during a beach vacation in Aruba has grown into an established Punta Cana dining destination known for seafood, steaks, hospitality, creative drinks, and a growing list of recognitions.

Now, Castaways is preparing for another chapter.

From A Beach Dream To An Established Destination

The idea behind Castaways began simply. While vacationing in Aruba, Sylvia Livingston looked out over the beach and suggested that one day they should have their own beach bar.

Michael Livingston took the idea seriously.

Two months later, he traveled to the Dominican Republic to explore the possibilities. By July 2021, Castaways Bistro Restaurant had opened its doors in Los Corales, placing the restaurant in the center of one of Punta Cana's most visited areas.

Since then, the restaurant has developed a reputation built around fresh ingredients and an intentionally personal approach to hospitality.

Fresh fish arrives directly from local fishermen three times a week, supporting a seafood menu featuring octopus, calamari, mussels, shrimp, lobster, and langoustines.

But seafood is only one part of the Castaways experience.

A Menu Built Around Scratch Cooking

Executive Chef Frisnert Lubin brings an international culinary background to the kitchen. Born in Haiti, Lubin later moved to Boston, where he trained in Massachusetts before working with various cruise lines and developing a broad range of culinary influences.

That experience is reflected in a menu that combines Caribbean ingredients with techniques and flavors gathered from different culinary environments.

Michael Livingston's philosophy for the kitchen is straightforward.

"Our chef is a real chef for starters, not a cook with a title."

There are no shortcuts in the kitchen. The restaurant does not even use a microwave. Dishes are prepared from scratch using quality ingredients, with the kitchen focused on delivering food that reflects the restaurant's standards rather than relying on convenience.

That philosophy can be seen across the menu, from seafood specialties to steaks, pasta, gnocchi, salads, and Chef Lubin's stuffed chicken breast.

Lobster Takes Center Stage

Lobster has long been an important part of the Castaways identity, and the restaurant is preparing to make it the star of an upcoming dining event.

In November, Castaways will introduce "Lobsterfest," featuring ten different lobster dishes, including the restaurant's famous Lobster Cheesecake. The special event will return for another edition in February, giving visitors and returning guests another opportunity to experience the lobster focused menu.

The concept reflects the restaurant's broader approach to seafood: take high quality ingredients and give guests reasons to experience them in unexpected ways.

Breakfast Gets A Castaways Makeover

The restaurant's culinary expansion is not limited to dinner.

Castaways has rolled out a brand new breakfast menu that brings the same combination of creativity and seafood influence to the morning dining experience.

Among the new offerings are bananas foster pancakes with cinnamon mascarpone cream and coconut crème waffles served with mango, pineapple, and macadamia nuts.

For guests looking for something more savory, the menu includes butter poached lobster eggs Benedict and a seafood omelette finished with lemon cream beurre blanc.

The beverage selection also receives a distinctive Castaways treatment, with an Old Bay Bloody Mary and a coconut crème frappuccino joining the breakfast lineup.

The additions broaden the restaurant's appeal while maintaining the value pricing that has remained part of its approach.

A Restaurant Refresh Is On The Way

Castaways is now preparing for one of its most significant changes since opening.

The restaurant will close temporarily from September 29 through October 16 for remodeling. The closure will also allow the entire staff to take vacation time and spend time with their families while the improvements are completed.

The renovation will include a new patio floor, new décor, and a new ceiling inside. A fun bright red accent wall will add a bold visual feature to the dining room, while new flowers have been added to refresh the patio.

Guests will also see changes in the presentation of the team itself. Staff members will return in new, more modern and upscale uniforms.

Inside the restaurant, white tablecloth service will introduce a more refined dining atmosphere, while the restrooms will receive a modern update.

Despite the visual upgrades and more refined presentation, Castaways will maintain its value pricing.

The renovation is therefore designed as an evolution rather than a reinvention. The restaurant will look different, but its focus on approachable hospitality and quality food will remain.

Recognition Continues To Follow

Castaways' development has taken place alongside continued recognition from dining and travel audiences.

Since its previous recognition, Castaways has been named a TripAdvisor Award of Excellence recipient for another year. The restaurant has also received another year of Top Ten Restaurants recognition from Everything Punta Cana and has been recognized among the Top Ten Restaurants by the Jamie Gruber Podcast.

Those latest recognitions add to previous accolades, including Castaways being named the Best Seafood and Steak Restaurant in Punta Cana by Luxe Magazine in 2025.

The restaurant has also maintained a strong presence among travelers through TripAdvisor and other dining platforms.

For the Castaways team, however, recognition is only one measure of success. The goal remains creating an experience guests want to repeat.

The Bar Has Its Own Following

Beyond the food, Castaways has developed a reputation for its drinks and spirits selection.

The full bar serves tropical favorites including coco locos, multiple mojito flavors, classic piña coladas, and the famously potent goombay smash.

Behind that relaxed Caribbean bar is a surprisingly extensive whiskey and bourbon selection, giving spirits enthusiasts another reason to visit.

The entertainment schedule adds another dimension. Karaoke takes place on Tuesdays, music trivia arrives on Fridays, and live music fills Sunday evenings.

Guests who prefer a quieter environment can retreat to the air conditioned interior, giving the restaurant flexibility for different types of visits.

Hospitality At The Center

Michael Livingston brings 44 years of hospitality experience to Castaways. His career has included independent and corporate operations and a wide range of positions within the industry.

That experience has shaped the way the restaurant approaches service.

"We believe that the people who come to visit with us are our guests, never a client or customer," Livingston explains.

It is a philosophy that emphasizes personal interaction rather than treating dining as a transaction.

Guests can arrive as strangers and leave having developed a relationship with members of the team. That atmosphere has become an important part of the restaurant's identity and a reason the food and renovations are only part of the Castaways story.

The Next Version Of Castaways

The upcoming renovation represents a significant milestone, but it is only one part of a larger period of development for Castaways Bistro.

A new patio floor, updated décor, a new interior ceiling, a bright red accent wall, new patio flowers, modern uniforms, white tablecloth service, remodeled restrooms, an expanded breakfast menu, and the upcoming Lobsterfest all point toward a restaurant continuing to evolve while protecting the qualities that established its reputation.

The result will be a Castaways that feels refreshed without losing its original character.

The beach bar dream that began in Aruba has become something considerably larger: a restaurant with an established place in Punta Cana's dining scene, a kitchen built around scratch cooking, a growing list of seafood specialties, and a hospitality philosophy that continues to put guests at the center.
